Peanut Butter Protein Cups Recipe

I sometimes have a problem with REALLY craving sweets before bed.  I wanted to make something that would help with my sweets craving and also be packed with protein.

And that’s why these Peanut Butter Protein Cups came to life 🙂

I saw these adorable silicone muffin cups at Bed Bath and Beyond the other day and picked them up.  I thought they would be perfect for making healthy frozen reeses peanut butter cups in them!

A silicone pan like this would work well too. I just found the cups and went that route.

This recipe is so quick and easy.  You only need 4 ingredients!

Ingredients:

  • 6 egg whites (I used Kroger’s brand of 100% egg whites.  Make sure they are 100% egg whites in the carton because these are already pasteurized and you don’t have to cook them to eat them.  Usually it will say “pasteurized” on the carton like mine does)
  • 1 TBS Natural Peanut Butter
  • 1 scoop of chocolate protein powder ( I used Dymatize Elite Whey)
  • 1 TBS unsweetened cocoa powder

Directions:

  • Add all the ingredients to your blender and mix them up!  I used my lovely Magic Bullet 🙂

  • I put my muffin cups inside a normal muffin pan so that they would be easier to put into the freezer together.  You don’t have to do this.

  • Add mixture into muffin cups equally.

  • Freeze for at least an hour!  That’s it!!! Enjoy your healthy protein packed peanut butter cups!

The reason I used silicone muffin cups is because when the peanut butter cups are frozen, they would be very hard to get out of a normal muffin pan.  This makes it simple to grab a frozen snack and peel it right off.

This is definitely going to be a go-to recipe for me.

The best part of this recipe is the nutrition!

The whole recipe made 12 cups.  A good serving size would be 4 cups.

  • Fat: 3.5g
  • Protein 19.8g
  • Carbs: 2.5

  3. I made the PB cups. Found them hard to eat (frozen). Do you let yours warm up before consuming? Also, I thought these could use more chocolate flavoring, but perhaps your protein powder has more of a chocolate taste?

My baking skills need quite a bit of work, but I attempted these last night, they were AMAZING as a liquid but I did want them as a cup… I froze them and couldn’t get them out this morning, I need to get my hands on some of those silicon cups!! I left them sit out (for a longgggg time) and they turned liquid 🙁 Is that normal? I just baked them and they puffed right up hahaha. Tasted okay but I do not recommend baking them. I’ve had a hard time finding yummy protein powder based recipes so I’m not giving up on this one!!
    Thanks SO much for your blog. I love learning through your journey. I spent 4 months at the gym earlier this year, 5 days a week, but did not eat right so I hardly saw any changes even though I did make gains in the weights I was doing and did manage to run a half marathon. I took a 2 month break from the gym and just focused on running, but craved the gym again. I’m back at it and trying to learn from my past experience. I get addicted to going to the gym, I find it hard taking rest days. Do you think 6 days a week is too much? Most programs have plans working each muscle group once a week, do you think it’s okay to work a group twice a week? So far I’m doing legs twice, shoulders/biceps/triceps twice, chest/back once, abs twice…

    • Definitely look for the silicone cups. I wouldn’t be able to get them out of the tray without them!

      I think 6 days is too much. Rest days are so important! I’m 8 days out from my first competition and I’m still taking 2 rest days a week.

      Train smarter. Not harder!

  5. Do you know how they’d taste if made with Vanilla protein powder? I was still going to add cocoa powder (well, carob. I’ve got TONS of it), but maybe double it.

    Quick question…6 egg whites for the recipe. So, on the side of the carton it says 3 tablespoons is equal to the whites of 1egg. So, I need to do like 18 TBS of egg whites? Is that correct? Im new to egg whites. Just want to make sure I’m doing it correctly. Thx!

  9. I’m going to try these with chocolate protein powder and than a chocolate/peanut butter protein for an extra kick of peanut butter! So excited. Thank you. These are so much better for you than Quest ones which are shockingly high in fat!
